Mango mirror cake



serve: 10 persons

Ingredients:



Milk 200 gm

Egg yolk 1 pcs

Gelatin 10 gm

Sugar 100 gm

Whipped Cream 350 gm

Sponge Cake 100 gm

Mango Puree 200 gm

Jell fix 100 gm



Method:

Boil milk and sugar, egg yolk in a separate bowl. Put the milk in the egg yolk when boil.

Put the gelatin in the mixture, and cool it Mix mango puree and whipped cream.

Make ready round cake ring with the sponge. Put the mixture in the ready ring.

Keep in the fridge. At last Jell fix on top for glazing then serve.



Seafood salad



Number of portion: 10 PAX

Ingredients:

Name of items: unit qty

Sliced salmon fish pes 20

Prawn pes 30

Sliced catle fish pes 20

Sliced red capsicum grm 50

Sliced green capsicum grm 50

Sliced onion grm 100

Sliced tomato grm 100

Lemon juice nos 02

Salt and pepper t/s 02

Basil leaf grm 100

Spicy chili sauce ml 200

Wonton skin pcs 10

Italian dressing grm 200



Mise en place:

Poached fish, prawn, catle fish and peeled the prawn.

Sliced cut all capsicum, tomato.

Squish lemon juice.

Trim and wash basil leafs.



Method:

1. Combine all seafood and tomato, capsicum, onion, dressing and mixing well.

2. Served with wonton shell or pasta shell.

3. Served with tomato chili dressing.

Italian Dressing Recipe:

Onion 150 gm

Salt 10 gm

Seasoning (white pepper) 10 gm

Red wine vinegar 200 ml

Balsamic vinegar 100 ml

Olive Oil 200 ml

Methods:

· Peel and chop onions.

· Combine onions, salt, white pepper and both vinegars.

· Add oil in a thin stream, stirring constantly. Mix well.

· Stir dressing before use.



Chicken Shashlic



for 8 pax

Ingredients:

Chicken (boneless) 2 nos.

Natural yogurt ½ cup

Ground ginger 2 teaspoons

Ground turmeric ½ teaspoon

Chili powder ½ teaspoon

Ground cardamom ¼ teaspoon

Ground cinnamon ¼ teaspoon

Salt 2 teaspoons

Cooking oil ¼ teaspoon

Sugar (optional) 1 teaspoon

Egg-yellow food colour some

Method:

· Cut each chicken into cube cut

· Arrange same size onion, capsicum & tomato.

· Combine all ingredients, mix them with the chicken, marinate for 3-4 hours.

· Arrange chicken, onion, capsicum, tomato in a skewer.

· Grill them on the charcoal or flat pan.

· Served shashlic with raita.
